This dish is my go to for lunch! I love it because it’s quick to make, fresh, high in fiber and has all macronutrients fats, proteins, and carbs to fuel me and get in a daily dose of raw alkaline greens.
INGREDIENTS:
1-2 cups of mixed greens / spinach
85g chickpeas
½ cucumber
Handful cherry tomatoes
½ avocado
½ lemon / lemon juice / lime
A couple of Basil leaves
Dressing: 1tbsp olive oil, 1 tbsp balsamic vinegar, pink sea salt
Seasoning: red pepper flakes, tajin seasoning
DIRECTIONS:
01. Dressing: In a small bowl mix equal parts olive oil, balsamic vinegar, ½ lemon or lime juice, a pinch of salt.
02. Place mixed greens/spinach in the bowl. Add the dressing to the bowl and coat the greens thoroughly
03. Add tomatoes, cut up cucumber, chickpeas, avocado, basil. Mix with the greens.
04. Add seasoning: a sprinkle of tajin, red pepper flakes.
