banana bread bars 

Vegan, Gluten Free, Soy Free alternative to banana bread. Not too sweet or heavy for dessert, breakfast, or as a snack. It can be cut into bars or double the amount of ingredients to make bread slices.

INGREDIENTS: (makes 10 bars)

2 medium or large bananas - very ripe. The riper the sweeter they will be. 

1 flax egg- mix 2 tbsp ground flax seeds 3 tbsp water, mix until egg consistency. 

2 tbsp almond butter: softened. 

1/2 cup quinoa flour - you can opt to use a gluten free all-purpose flour: brown rice/almond, and adjust the measurement as needed. Quinoa flour is great for a nutty taste and a quality (alkaline vegan approved) ingredient. I used bob’s red mills brand. 

2 tbsp honey: manuka honey is my personal preference but any will work. 

½ cup almond milk. 

1 tsp baking powder. 

1 tsp cinnamon. 

1 tsp vanilla extract. 

Pinch of salt. 

Almond flakes: optional to sprinkle on top. 

DIRECTIONS:

01. Pre heat your oven to 350 degrees.

02. Mash bananas with a fork, mix in 2 tbsp of melted almond butter, 2 tbsp of honey, 1 tsp of vanilla extract and the prepared flax seed egg (you can also replace this for one egg if not vegan), ½ cup of almond milk and Mix. 

03. Combine the dry ingredients: quinoa flour, cinnamon (one tbsp or more to preference), 1 tsp baking powder, a pinch of salt.

04. Add the banana mixture to your dry ingredient mixture and mix well until forming a smooth batter. 

05. Pour the batter in a 3x8 loaf pan. 

This step is optional, add a sprinkle of sliced almonds, a drizzle of honey and extra cinnamon on top. It makes it look pretty 😊 and adds extra flavor to the “crust”. 

06. Place in the oven at 350 degrees for about 30 minutes. You will know it is ready when top has browned and you can stick a toothpick or fork in and it comes out clean!
