THE SIMPLEST, HEALTHIEST,
OATMEAL BERRY CRUMBLE CAKE
If you are not one to follow crazy detailed recipes, love a healthy bake, or are bored of your traditional oatmeal with fruit, this recipe is for you! This recipe is one of those happy ending stories where I try to use random ingredients I have in my house and make something tasty and nutritious out of it. Part of me believes I really do this to satisfy my inner child's craving to play with food and not follow a step by step recipe. I grabbed a bowl, got my ingredients, and started layering while watching Netflix. This crumble cake is so easy and simple that I have made it three times this week and have been enjoying it for breakfast, and as a snack along side a warm cup of my favorite tea :)
Health benefits: Oats are high in fiber, rich in iron, provide some protein and can be made gluten free if choosing gluten free oats. Berries are a big "beauty food" as they are high in antioxidants, fiber, vitamin C (skin and immunity!), have anti inflammatory properties, help to reduce cholesterol and are low glycemic (lower sugar and better insulin response). The chia and flax seeds are amazing for digestion and balancing hormones, and provide more plant based protein and fiber. No eggs needed, no oils, no refined sugar. It's a win, win, win for me! INGREDIENTS:
- 2 bananas, over ripe is best, mashed
- 1 cup oats
- 2 tbsp chia seeds, 1 tbsp flax seeds
- 1 cup almond or coconut flour (I think almond is best!)
- 1 cup dry unsweetened coconut flakes
- 1 cup almond milk / your choice of nut milk
oat, hemp, cashew are best.
- 2 cups frozen mixed berries. I did a blend of blueberries, raspberries, cherries.
- 2 tbsp fig jam or berry, preferably sugar free. I used fig jam as it's the only one I had a thought it was a great combination with the berries to balance some of the berry tartness with a sweeter fruit.
- 2 tbsp honey or organic natural maple syrup
optional: 1/2 cup cacao nibs or dark chocolate chips/chunks.
DIRECTIONS:
Oatmeal bottom layer
- mash 2 bananas onto a baking sheet
- add the cup of oats on top
- add two tbsp of chia seeds
- add 1 cup of nut milk of choice
- mix these ingredients together with the mashed banana
Berry layer
Dump the 2 cups of berries on the oat/banana mash. *add the optional chocolate chips / cacao nibs here with the berries.
Crumble layer
In a separate bowl, mix 1/2 cup of almond flour, 1/2 cup coconut flakes 1 tbsp flax seeds, and 2 tbsp of honey or maple syrup, and 2 tbsp of jam. The mix should be "crumbly" and dry.
Dump the almond flour mix on top of the berries

Bake at 350 for 20 minutes or until the crumble layer has turned golden brown.
